In Soviet times, a huge number of recipes appeared, many of which were the hallmark of prestigious restaurants. The whole country wanted to try these dishes. Today, much of what was done at that time has already been forgotten. We decided to remember how those same dishes were prepared.
1. Moscow borsch
To prepare borscht, you will need beef on the bone - 700 g, 1-3 pieces of beets, water - 3 liters, a quarter of white cabbage, 2 pieces of onion, 1 piece of carrot, 1-2 cloves of garlic, about 50 g of tomato paste, 15-20 gr vinegar, 1 tablespoon sugar, a little fresh parsley, sour cream, vegetable oil, bay leaf, salt and pepper.
First, for about an hour, broth is cooked from meat, onions and parsley. At this time, the beets are cut into strips and fried for 5 minutes in oil. Vinegar and pasta are added to it, as well as all other vegetables. All ingredients are thoroughly mixed. After that, a ladle of broth is added to the beets, as well as salt, sugar and seasonings, after which we simmer under the lid.
Another onion is cut in half rings, and the carrots are cut into strips. Vegetables are turned into pulp in oil. The broth is put on fire. Cabbage is cut into strips and added to borscht. The substance is brought to a boil, after which the fire is reduced to a minimum. After 10 minutes, add onions and carrots. It remains to add the garlic, chop the meat and wait a little more.
When serving, add sour cream.
2. "Passenger" salad
You will need 300 grams of beef liver, 2-3 pieces of onions, carrots - 1 piece, 2 pieces of pickled cucumbers, mayonnaise and vegetable oil.
First, the liver is cleaned of films, cut into pieces and fried in a pan. The cooled liver is chopped into strips, cucumbers, onions and carrots cut in the same way are added to it. Onions can be pre-sautéed in oil in a frying pan.
3. Capital salad
You will need 250 grams of green peas, 400 grams of boiled tongue, 4 pieces of boiled chicken eggs, 3-4 pieces of boiled potatoes, 1 piece of onion and carrots, one apple, four cucumbers, mayonnaise for dressing.
Potatoes and carrots are boiled in their skins and then peeled. The peel of the apple is cut off and the core is removed. The onions and eggs are peeled. The tongue and other products are cut into small cubes. The slices are folded into a bowl, completed with a pot, mixed and seasoned.
4. Processed cheese snack
For cooking, you need to get two processed cheese, 2-3 cloves of garlic, 4 pieces of chicken eggs, 30-40 grams of butter and mayonnaise for dressing.
Boil eggs and grate cheese curds on a fine grater. After that also three and eggs. Mix cheese and eggs, add butter to them. Mix everything thoroughly. We fill with mayonnaise. The appetizer should be spread over bread before eating.
5. Milk jelly
To create a delicacy, you need 0.5 liters of milk, 1-2 tablespoons of sugar and, of course, 1 tablespoon of potato starch.
We take half a glass of milk and stir the starch in it until a state of homogeneity is achieved. Pour the rest of the milk into a saucepan, add 2 tablespoons of sugar there and put it on fire. We supplement the hot milk with "starch" milk, after which we cook the jelly, stirring constantly (so that no lumps form).
6. Pancakes with jam
To prepare delicious pancakes, you will need one chicken egg, 2 glasses of flour, 0.5 liters of kefir, 3 tablespoons of sugar, salt, soda - 0.5 tablespoons, vegetable oil and 200 grams of jam.
We start the cooking process by heating kefir. Add soda to it, stir the resulting substance. Now add the egg, sugar, salt. Beat everything with a whisk. In parallel, heat the pan with oil.
The dough is laid out with a tablespoon. A small amount of jam is placed on top of it, then another spoonful of dough is placed to close the filling. Fritters are fried on both sides until golden brown.
7. Meatballs-hedgehogs in tomato sauce
To create such meatballs, you need to get minced meat (best beef with pork) 0.5 kg. You also need one chicken egg, 100 g of rice, 1 piece of onion, 2 cloves of garlic, 1 tbsp of tomato paste, 1.5 tsp of sugar, 2 tbsp of flour, vegetable oil, salt and pepper, and 0.4 liters of water …
Cook rice. Add the onion and garlic to the minced meat, and then the cooled rice and the beaten egg. Salt the resulting substance, add seasoning and mix well. Using our hands, we make small meatballs, then roll them in flour, fry in a pan until golden brown.
At the same time, we dilute tomato paste in water, add sugar and salt to it. Ready meatballs are poured with the resulting sauce and stewed for 15-20 minutes over low heat under a closed lid.
