Despite all the beneficial properties of cauliflower, most simply do not eat it, replacing it with ordinary white cabbage. It’s in vain. Almost anything can be prepared from the inflorescences of this cabbage: from classic soups / borscht to exquisite dishes that will appeal to the whole family, and will also be appreciated by those who look after their health and shape.

1. Soup puree

Cauliflower soup takes less than an hour to cook. And its main secret, which enhances the taste, is soy milk and vegetable broth. It is they who make this dish both dietary and nutritious.

Ingredients:

• Medium-sized cauliflower - 1 head;

• Soy milk - 300 ml;

• Vegetable broth - 300 ml;

• Saffron - on the tip of a tsp;

• Fresh parsley - 5-8 branches;

• Sea salt - to taste;

• Ground black pepper - to taste.

Cooking method:

• Mix soy milk with vegetable broth;

• Add saffron;

• Wash the cabbage;

• Dry;

• And disassemble into inflorescences;

• Then send to a saucepan with milk-vegetable broth;

• Boil;

• Reduce heat;

• And cook for 15-20 minutes;

• Salt and pepper;

• Stir and send to the blender bowl;

• Kill until smooth;

• Pour into deep bowls;

• Before serving, garnish with finely chopped parsley and inflorescences of boiled cauliflower;

• Serve with croutons or croutons.

2. Lasagna

Many of us are used to classic lasagna, but what if the usual ingredients for the classics are replaced with cauliflower, seasoned with cinnamon and hot red pepper?

Ingredients:

• Large cauliflower - 3/4 of the head;

• Leaves for lasagna (ready-made) - 200-225 g;

• Olive oil - 2 tablespoons;

• Red pepper (flakes) - 1-2 tsp;

• Black ground pepper - to taste;

• Salt - to taste;

• Ricotta - 220 g;

• Grated Parmesan - 100-150 g;

• Vegetable / chicken broth - 2-3 tbsp;

• Marinara sauce - 2-3 glasses;

• Cinnamon - 1 pinch.

Cooking method:

• Wash the cabbage;

• Dry on paper towels;

• Disassemble into inflorescences;

• Cut into medium cubes;

• Send to a bowl;

• Season with olive oil;

• Pepper and salt;

• To stir thoroughly;

• Put on a baking sheet (cover with parchment first);

• Send to the oven preheated to 230 degrees;

• Bake for about 15-20 minutes (turn the cabbage slices after 10 minutes);

• Remove from the oven;

• Sprinkle with hot red pepper;

• Stir and set aside;

• Mix Ricotta with vegetable broth;

• Add cinnamon;

• Salt and pepper;

• To stir thoroughly;

• Grease a rectangular baking dish with oil;

• Put a spoonful of tomato paste or sauce on the bottom;

• Smooth out;

• Then lay out a layer of lasagna sheets;

• Grease with ricotta;

• Top with a layer of cauliflower;

• Brush with tomato sauce or pasta;

• Sprinkle with a layer of Parmesan;

• Repeat all the same;

• Then cover the form with foil and send to the oven preheated to 180 degrees for 40 minutes;

• After removing the foil;

• Leave the lasagna in the oven for 5-10 minutes until golden brown;

• Then remove from the oven;

• Let it brew for 10 minutes;

• Cut evenly before serving.

3. Caesar salad

Almost everyone is familiar with Caesar salad. But few people know that it can be cooked with, for example, cauliflower and anchovies. A strange combination of ingredients, isn't it? But if you believe culinary guru Jamie Oliver, then the dish turns out to be licked.

Ingredients:

• Chicken fillet of medium size - 2 pcs;

• Anchovies in oil (fillets) - 2 pcs;

• Parmesan - 15 g;

• Lemon - 1 piece;

• Natural yogurt - 4 tablespoons. with a top;

• English mustard - 1/2 tsp;

• Worcester sauce - 1 tsp;

• Wine white vinegar;

• Olive oil (first pressing);

• Small red onion - 1 piece;

• Romaine lettuce - 1 head of cabbage;

• Fresh rosemary - 1 branch;

• Whole grain bread - 1 slice (1.5-2 cm thick).

Cooking method:

• Grate lemon zest on a fine grater;

• Grate Parmesan on a coarse grater;

• Pour into a deep bowl;

• Mix with lemon zest;

• Anchovies cut into medium cubes;

• Mix with mustard, Worcester sauce and yogurt;

• Mix lemon juice with a tablespoon of vinegar and two tablespoons of olive oil;

• Mix well;

• Add chopped onion to the resulting dressing;

• Wash the cabbage;

• Dry well;

• Disassemble into inflorescences;

• And cut them very finely;

• Chop the lettuce and add together with the cabbage inflorescences to the onion sauce;

Important! Not stir before serving;

• Heat the oil in a frying pan;

• Arrange a sprig of rosemary and evenly sliced chicken fillets;

• Fry on all sides until light golden brown;

• Cut the bread into cubes;

• Fry in oil, where chicken was fried;

• Mix all the resulting ingredients together in a deep bowl;

• Season with sauce;

• Sprinkle with croutons;

• And serve.

Ruddy, spicy and incredibly tasty cauliflower, whole baked in the oven with garlic and cheese, is a dish that hardly anyone can resist.

Ingredients:

• Medium-sized cauliflower - 1 head;

• Hard cheese - 50 g;

• Butter - 60 g;

• Lemon zest (grated) - 1 tsp;

• Garlic - 1-2 cloves;

• Fresh parsley - 3-4 branches;

• Salt - to taste;

• Black ground pepper - to taste.

Cooking method:

• Wash cabbage well;

• Dry with towels;

• Grate cheese on a medium grater;

• Put the head of cabbage in a deep baking dish;

• Melt the butter;

• Mix with garlic passed through a press, chopped parsley;

• Salt and pepper;

• To mix everything;

• Grease cauliflower with the resulting mixture;

• Cover tightly with foil;

• Send to the oven preheated to 190 degrees for half an hour;

• Then get the cabbage, remove the foil;

• Send again to the oven;

• After 15 minutes, sprinkle with cheese;

• Put it back in the oven for 3-5 minutes;

• Cut the finished cabbage into even pieces before serving;

• Can be served with sour cream, lemon sauce, or fresh herbs.

5. Baked cauliflower with eggs

Oven-baked cauliflower with sour cream and mayonnaise sauce is another dish worth trying. Delicate and aromatic, it will appeal to the whole family, and also, it can be served as an independent snack or with a side dish of boiled potatoes, white rice.

Ingredients:

• Medium-sized cauliflower - 1 pc;

• Hard cheese - 150 g;

• Eggs - 2 pcs;

• Sour cream of medium fat content - 3-4 tablespoons;

• Medium fat mayonnaise - 2-3 tbsp;

• Salt - to taste;

• Black ground pepper - to taste;

• Vegetable oil - 1 tbsp.

Cooking method:

• Wash cabbage well and dry thoroughly;

• Then disassemble into inflorescences;

• And boil in slightly salted water for 5-7 minutes;

• Drain the water;

• Cool;

• Beat eggs;

• Mix with sour cream and mayonnaise;

• Salt and pepper;

• Stir and beat again until smooth;

• Grease a baking dish with oil;

• And put cabbage inflorescences in it;

• Top evenly pour the resulting sauce;

• Grate cheese on a medium grater;

• Sprinkle generously on top;

• Send to an oven preheated to 180 degrees for 15-20 minutes;

• Serve warm, cold, with or without garnish.
