Nowadays, absolutely everyone can make preparations for the winter, in particular, pickle cucumbers, even in the absence of any experience. There are a huge number of recipes on the net. Just take it and do it. Another thing is that not all of them are successful and banks can simply "shoot". You have to check everything by trial and error. But there is a universal recipe and method that ensures not only the reliability and safety of the curl, but also an excellent taste for the cucumbers themselves. Plus, the recipe doesn't involve many ingredients and doesn't take a lot of time.
1. Procedure for pickling cucumbers
The first thing to do is to pour the collected fresh cucumbers with cold water for two to three hours. This will end up being strong and crunchy. After this time, the vegetables are well washed under the tap, after which tails are cut on both sides of each cucumber. The vegetables prepared in this way are laid out in a saucepan and poured with boiling water.
It is recommended to cover the pan with a plate on top. So the cucumbers will not float. After that, the pan is covered with a lid on top and wrapped in a blanket. Then, until the cucumbers are completely cool, you can do other things. It's best to do this overnight - a good time saver. The cooled water is drained away. The cucumbers themselves will definitely change color from green to olive. While the brine is being prepared, the cucumbers can be safely laid out in pre-prepared jars.
2. What you need to take for the marinade
For about five kilograms of cucumbers you need to take:
- water - three liters;
Water is put on the stove and just before it boils, sugar and salt are added to the container, vinegar is poured. All this must be mixed until completely dissolved and wait until the brine boils.
Garlic, dill (umbrellas), peas (black) are placed in sterile jars of cucumbers. For a jar with a capacity of one liter, two or three garlic cloves are usually enough, a small dill umbrella. The amount of peas is optional - a few are enough.
Important! You need to be careful with garlic. If you put more of it than needed, the cucumbers can become soft, not crunchy.
Cucumbers in jars are poured with brine, still boiling, covered with a lid and rolled up. After that, the banks must be turned over and wrapped in a warm blanket. Old winter outerwear is also suitable for this purpose. The main thing is to keep warm inside the cucumber jars for the longest possible period of time. When the jars are completely cool, they can be moved to a permanent storage location - in a closet or basement.
