Option 1: Sour cream sauce

To prepare it, you will need seven tablespoons of sour cream, one tablespoon of lemon juice, three tablespoons of olive oil, one teaspoon of mustard, a pinch of salt and pepper. The preparation method is elementary: you need to add all the ingredients to a deep bowl (put sour cream last) and stir until a homogeneous consistency is obtained. You need to use fatty sour cream, 10 percent will not work. The fact is that the fatter the product, the thicker it is, which means it keeps the shape of the salad better. As for mustard, it can be Dijon or ordinary, Russian.
Sour cream sauce is suitable for herring under a fur coat and various variations of flaky salads. If desired, you can even spread it on sandwiches instead of pate.
Option 2: Kefir sauce

The sauce contains three boiled yolks, a teaspoon of lemon juice, three tablespoons of cottage cheese, half a teaspoon of mustard, five tablespoons of kefir, salt and pepper to taste. Getting a homogeneous mass with a spoon is unlikely to come out due to the presence of "hard" ingredients (yolks and cottage cheese). Therefore, it is better to use a blender to make the sauce. Option 3: Curd sauce

To prepare the sauce, you need to take 250 grams of cottage cheese, two tablespoons of milk and olive oil, one teaspoon of vinegar and mustard, a clove of fresh garlic, salt and pepper to taste, as well as any greens you like.
First, rub the cottage cheese through a sieve, and then add milk to it to make it soft. Next, put cottage cheese, vinegar, mustard, garlic, salt, pepper and pre-chopped herbs in the blender bowl, and beat all the ingredients until smooth. Add olive oil at the end and stir well. If the sauce is too thick, add a little milk to dilute it.
The dressing turns out to be very spicy, light, fresh and is in no way inferior to mayonnaise. It goes well with vegetables, fish and meat. Depending on the dish, adjust the consistency yourself, as well as the herbs present in the sauce.
Option 4: Bean Sauce

An original sauce, suitable for mixed salads and meat dishes, comes from white beans. It is best to take ready-made canned food. You will need 200 grams of the main ingredient, one lemon, five tablespoons of sunflower oil, one teaspoon of mustard, a little salt and pepper. You must first drain the liquid from the beans, and then grind it with a blender to form a puree. Add the pulp of one lemon and the rest of the ingredients to the resulting mass. Mix everything thoroughly and season your dish.
Option 5: Nut Sauce

The ingredients in the sauce include one tablespoon of nut butter, soy sauce and herbs (parsley or basil), one tomato, two tablespoons of coconut milk, ¼ onions, one clove of garlic, half a teaspoon of grated ginger, one glass of boiling water, salt and pepper each taste.

Option 8: Cucumber Sauce

A very light and delicate sauce that goes well with fried meat, boiled potatoes and even ordinary toasts. The ingredients include one fresh cucumber and five small pickled cucumbers, four tablespoons of sour cream, six tablespoons of mayonnaise, three cloves of garlic and herbs.
Cucumbers need to be peeled and grated on a coarse grater, squeeze the juice and transfer to a measuring glass. In a separate container, you need to mix all the other ingredients, add them to the cucumber mass and beat with a blender to get a uniform consistency. Voila - the sauce is ready!
