Most of them have one feature - the cap is covered with a sticky skin. There are those in which it is simply velvety or slightly damp, but we are not talking about these specimens now. We are used to the fact that this part of the mushroom must be removed before cooking. Is it necessary to do this?

So, let's go back to the simple all known butter with their characteristic skin. Disputes over peeling have been going on among mushroom pickers for a long time.
1. Arguments of those who are in favor of removing the skin

There are people who are confident that the fungus film contains substances that cause a laxative effect. That is why it is necessary to remove it in order to avoid obvious problems. Of course, problems with stool can occur if you eat a lot of mushrooms. But it doesn't matter whether they have a skin on them or not. Do not forget about the individual qualities of your body. For everyone, he reacts differently to a particular product.

Some people think that small mushrooms do not need to be peeled off, but large ones do. It is not entirely clear why this is so. Someone peels the skin for aesthetic reasons, supposedly in a soup made from them or in a marinade, they look better, like the dish itself. Here everything is really so, and one cannot but agree with this. Well, there are those who do it out of habit, as my mother taught. Such is their tradition and it is useless to argue here.

In fact, there is no special need, and indeed no, in removing the skin from mushroom caps. It does not contain harmful elements, therefore it is absolutely safe for health.

Of course, if this is a tradition that has passed from generation to generation, no one bothers to continue doing it. The same can be said about taste preferences, although dishes made from peeled and unrefined butter do not differ much in taste, except a little in color.
